Since 1876 the Edwardian homestead, McCormick House, has stood gracefully on what was fertile grazing land for over 100 years. Reborn as the cocktail bar for this iconic hotel, it stands as an enduring reminder of the history of this picturesque property.
Planted in 1989, the 11-hectare LL Vineyard has taken root in the deep volcanic soils typical of the slopes of the Mornington Peninsula, and is known for producing fine, cool climate Chardonnay and Pinot Noir. Over 30 years’ experience has refined and honed our practices to grow the very best wine from this unique site, with viticulturist, Ant Davenport hand-tending each vine and working closely with winemaker, Geraldine McFaul to maximise quality each season. All estate, single vineyard and Rare Hare blends are made on site in our boutique winery.

Allow an hour to walk among the vines and wander the winery, where we'll delve into details of vintages past and our winemaking cast. Learn the visual story of alchemy that inspires the art and design of Jackalope Hotel, then, settle into a seated tasting in our cocktail bar, Flaggerdoot. Discover our growing and winemaking philosophy, with an opportunity to taste and blend work-in-progress components of LL Vineyard Chardonnay and Pinot Noir, then compare them to the current estate wines. Our cellar door team will then take you to Rare Hare restaurant to enjoy our set menu lunch.
The hotel's stunning, black 30-metre infinity pool laps up to the surrounding vines, showcasing a tranquil sightline from water to wine. Private pool deck conveniences include a heated plunge pool, all-day dining with sunbed service and wireless internet.
7-day Itinerary
Day One

3 pm- Check-in. Enjoy a beer, cider or gin & tonic and a snack from the complimentary minibar on your private terrace.
4 pm - Wander across the piazza for a complimentary wine tasting at our cellar door.
7 pm - Dinner in Doot Doot Doot. One of Jackalope's two hatted-restaurants, time-honoured techniques meet culinary curiosity in dishes that are methodical yet explorative. Botanically-inspired and drawing on our expansive kitchen garden, Doot Doot Doot delivers an ever-evolving tasting menu, with the option of matched wines.
10 pm - Retire to the hotel's cocktail bar, Flaggerdoot, for a digestive.
Day Two

9 am - Breakfast served in Doot Doot Doot.
11 am - Relax into Jackalope's signature spa treatment. This Wine Immersion treatment includes a Pinot Grape Skin foot soak and body scrub, relaxation massage, and full-body moisturise.
2 pm - Enjoy a long lunch overlooking the vineyard in our winery restaurant, Rare Hare.
5 pm - As the sun dips over the vineyard, sip on cocktails and roast marshmallows by the fire on our tasting terrace.
8 pm - Enjoy dinner at local French bistro, Le Bouchon. Complimentary hotel transfers are available.
Day Three

9 am - For a change of scene, order breakfast to your private terrace.
11 am - Take a coastal drive to the Bushrangers Bay walking track. Filming location for 'Where the Wild Things Are', this 5.4km coastal and bush track offers glimpses of Australian wildlife and breathtaking beach views.
1 pm - En route home, stop by Montalto for a wine tasting and casual lunch in The Piazza. On sunny days, sit in the courtyard that opens onto Wendy's Garden, and the property's picturesque vineyard and sculpture garden.
7 pm - Have a night in. Retire to your suite for in-room dining and on-demand popcorn while you dial up a new release movie.
Day Four

9 am - Breakfast served in Doot Doot Doot.
11 am - Take in the best of the Peninsula's winemaking scene with a private wine tour, hosted by the charming, Arthur O'Bryan. Plunge Wine Tours is an adventure taking you beyond the cellar-door to meet winemakers, discover private cellars and art collections, wander vineyards, bliss out with a beachside picnic or wander in the shallows with a glass of sparkling in hand.
5 pm - Return to the hotel for a late-afternoon swim and cocktail on the pool deck.
8 pm - Dine at Port Phillip Estate. One of the region's most exciting food and wine destinations boasting vineyard and coastal views.
Day Five

9 am - Breakfast served on your private terrace, followed by a wander through Ali's kitchen garden.
11 am - Catch a couple of hour's sunshine relaxing on the pool deck followed by nibbles and cocktails, lounging at your leisure.
5 pm - Enjoy a complimentary Lexus transfer to Pt Leo Estate for a wine tasting, a tour of their sculpture park and dinner at their intimate fine dining restaurant, Laura.
Day Six

8 am - Greet the day with morning Yoga (offered every Sunday through summer).
10 am - Breakfast Served in Doot Doot Doot.
12 pm - Set out to explore the local region and sample local produce, Saturdays you can stop by Flinders pier to sample Harry's Mussels.
4 pm - Wash away the day with a soak in your Japanese bathtub. Add a DIY treat like our Chai Soak and Shiraz or Milk Soak and Sparkling.
5 pm - Fresh from your bath, enjoy a full-body 60-minute relaxation massage.
7 pm - Spend your final night on-property with one more delicious dinner in either Doot Doot Doot or Rare Hare.
